In Bloom

Image
Before the crepe myrtle trees were cut back so that they didn't break, we took some pictures. Unfortunately it was a little glarey outside and Gregory just woke up from a nap, so he wasn't in the picture taking mode :) Here's something funny to share....  Gregory was visiting with Oma and Opa.  Gregory decided to get a little grumpy, cranky and started fussing... loudly.  Oma looked at Gregory and in her strict "teacher voice" said, "No, stop that Gregory."  Gregory got silent for one second then forcefully yelled back "AH!" with total attitude!  It was one syllable but when he made that sound his entire body leaned forward.  Opa saw and heard Gregory's response and busted out laughing, saying, "Gregory just told you!"  hehe Greg and I both love this next picture - love both of them smiling!

Soy Marinated Chicken Thighs - on the Grill

I found this recipe on the Internet - looked super easy.  The only thing is that I don't grill.  Can't stand to work with the barbecue pit.  But I had the marinade going and Greg was a trooper to grill after a hard day working long hours. My husband gives it a 60 out of 100, the only complaint being it was too salty. Ingredients: 3 tablespoons low sodium soy sauce 2 tablespoons EEOO Skinless boneless chicken thighs 2 garlic cloves, minced Salt and Pepper In a ziplock bag, mix ingredients and let marinate between 4-24 hours. Grill it.  Greg said it smelled delicious and it was good, other than the salt.  So, I'll nix the salt portion of the salt and pepper and I might cut down the soy sauce to 2 tablespoons.

Kim's daughter, Ashley, is a talented young artist.  Last Christmas I saw some of her drawings and was really impressed.  After our baby was born, Ashley made this for us! I love it!  Thank you, Ashley!

Letter to my Son - about your Mommy

Image
Dear Son, One of my fellow bloggy friends is doing a month of "Getting to Know Your  Mommy" - each post for this month she is writing to her newborn son, telling him something or answering a question for her son to read in the future about her.  I figure my blog is my getting to know me... but I thought I'd write a little something. I'm getting to know "mommy" too.  It's a new role.  I started working at the age of 12 years old until my 40's without a lapse of work between different jobs... the last job I had I was there for over 20 years; I managed 3 companies at once.  It was stressful to say the least, but I was good at it.  I knew what I was doing and could handle it with my eyes closed. From that type of knowledge and confidence and security, I became unemployed.  And then, employed again, but not by a company but by God.  "Mommy" - it's a new role.  One I didn't ever think I'd be in, given our fertility issue...

Dash of this and Dash of that

Image
I mentioned in the last post that we took a cooking class... another tip that I've found helpful is the "dash of salt and dash of pepper" - to minimize cooking time, do them both at the same time by having a pre-mixture of the two. It was recommended to use Kosher salt - though word from the wise - Kosher salt doesn't taste as "salty." I found a cute glass container to house my mixture.

4 month doctor appointment

Image
Today we went to see Dr. Heller.  You weighed in at 15.1 pounds.  You gained 3 pounds from 2 months ago.  The doctor said you are only “slightly” above average in weight.  Two months ago, you were also only “slightly” above average in weight, so it’s a consistent increase.  I asked the doctor if you were “fat” and the doctor replied, “Absolutely not!”  Your Daddy teases me about having a fat baby all the time.  I know he’s teasing, but I just wanted to make sure I’m doing the right thing for you, my little boy. You measured 26.25 in length – an increase of 3 inches.  Dr. Heller said this IS definitely above average in length!  However that doesn’t mean you will be tall, just that you are above average in length for this point in time.  You might have just hit a growth spurt and next visit you’ll be average length again. So, you gained 3 pounds and grew 3 inches.  It was obvious you were getting l...

Garlic Butter Chicken

Image
My husband and I took a cooking class and had a lot of fun with it.  They had some great tips, which I'll share in my blog.  The first, which is a fantastic time saver - Garlic Butter. You can put this garlic butter on anything from bread to chicken and I want to try it on cooked cauliflower soon as well :) Simple to make: Take butter out and bring to room temperature  (2 or 3 sticks of butter) Chop up  3 garlic cloves Chop up some parsley Blend it all together and make it into a log to be wrapped up in Saran Wrap - toss in the freezer. Now, when you're ready to make Garlic Butter Chicken - take out the garlic butter log from the freezer, cut off a piece of the butter - toss butter into a hot pan, add chicken.  Be prepared - the garlic butter will make your house smell delicious! Cook until Chicken is brown on both sides. Cook some angel hair pasta - top with chicken and some of the garlic butter. Or add some red sauce on top (which my husband really liked). ...

Guess What

Image
Guess what Mommy TODAY I AM 4 MONTHS OLD!!  I'm getting to be a big boy! We saw something funny at Walmart today :) And I thought I had long eyelashes - Giggles Happy Four Month Old, my sweet son.  Today he is 17 weeks, 1 day old - 4 months on the 18th.  It's so  funny, because when a baby is born, we go by the days and weeks.  But when he gets around 2 months, the doctors go by the day of the month on the calendar for monthly shots.  Gregory will see his doctor at the end of this week.
