Honey Sesame Chicken

The word "honey" might make you think this is ultra sweet, but with the soy and hoisin sauce, it adds some extra flavor.  I'm not used to working with hoisin sauce.  Greg said to decrease the hoisin in the future and use a mixture of breast and thigh meat, because even in a crock pot, it can make the meat more tough while cooking.  The sauce is thick, but it's supposed to be that way in the end. Special note - I combined this dish with a low flavor rice/quinoa package (purchased at Sam's).  We have used this package before and found that it doesn't have much taste - but it was a good combo with the recipe I used, because the sauce was so strong. Ingredients: 4 boneless skinless chicken breast (and thighs) 1 Cup honey 1/2 cup low-sodium soy sauce 1/4 Cup hoisin sauce (maybe cut this in half?) 1 Teaspoon toasted sesame oil 2 Cloves garlic, minced 6 Tablespoons cold water 2 Tablespoons corn starch Garnish Green onions, sliced Sesame seeds Instructions: Cut chicke

Dear Son, You have been doing SO well with summer camp!  Mommy was worried about you not having enough social skills.  There were two days where you had less than favorable reports where you "were aggressive with taking music toys from friends" (as Aunt Kim said "boys will be boys") and the second one wrote that you "couldn't keep your hands to yourself."  But no explanation went with it, so I'm unsure if you hit someone, pushed back, went after toys?  But everything all other days are great, even some reports of you eating all of your food (on pancake for lunch day and chicken lunch). But today... mommy had a little scare.  Mommy was at work and she heard her cell phone go off, for a phone call.  Mommy mostly gets text messages, if anything, on her phone during work time and that's rare, so when the phone rang, heart in throat... and worse when Mommy saw it was a call from Kehoe France School.  Mommy's fingers couldn't answer the p

Tip 22 for Cupcakes

My son's summer camp has assigned days for when parents need to bring snacks.  Tomorrow is Gregory's day - our day.  I decided on baking cupcakes, then making the frosting from a Wilton recipe, then decorating it the monster style.  But I soon realized.... the monster style takes WAYYYY too much icing and I didn't make a batch big enough.  And I didn't want to make more.  Lol.  So, I played around with tip 22 and came up with these cupcakes.  Kids can't be too picky at camp, right?

Daddy is my hero. He teaches me about hard work.  I see him going to work and coming home to work even more.  One day, he will help me with my chemistry classes. Dear Son, The other day Daddy received his new CPAP mask.  You found the instructions and handed them to me, then you pointed to the instructions.  You saw the words on the page and pointed again.  I asked, "Do you want me to tell you a story?"  You nodded your head. I said, "How about you tell me the story.  Is this a story about a cat or dog?"   You said, "Cat!"  I asked, "Is it a purple cat?"  You said, "No."  I asked, "Is it a blue cat?"  You said, "No." "Is it a brown cat?"  You nodded your head yes.  I said, "Okay, this book (instruction booklet) is about a brown cat.  That's great!  What is the cat doing?  Is the cat running?"  You said, "No."  I continued to ask questions until you said yes... the story consisted of a brown cat that liked to sleep, walk and meow and the cat would say I Love You.  Do you think Gregory had our cat in mind?
