Crescent Tacos

I'm not a fan of tacos.  I don't like the hard shells that fall apart after one bite.  And the soft shells don't taste that good.  But when I found this recipe and read all the good reviews, I had to give it a go.  It's easy - brown some meat with seasoning.  Then open the crescent rolls, leaving two attached and press the edges together.

Layer in a diagonal the following:  refried beans, browned meat, then tomatoes, green onions and cheese:











Now, at this point, you're supposed to be able to fold the other part of the edges together to create a triangle.  Ummm, I over stuffed mine and did I mention I was rushed - a friend had stopped by to help with the gardens, the baby was crying, etc, etc.  Anyway.. I didn't bother trying to "fix" the triangles perfectly :)







Yeah, a little messy, ok... not my prettiest meal!  BUT... that said, my husband said it is one of the best :)  Woot - goes in the oven and comes out delicious :)







My husband said sour cream would have been a great topping.  I'm thinking guacamole too, but my husband doesn't like avocados.

A side note - I had left over seasoned ground meat. My husband made "Shepherd's Pie Mexican style" - by mixing the ground meat with mashed potatoes and Mexican cheese.
