Smothered Chicken
My grandmother gave me a cookbook way way wayyyyyy back when. I decided to try some recipes from it. The only change I did to the recipe was to add the cheese, to make it "smothered chicken."
My husband gives it a solid 6 out of 10. I'm open to suggestions on making this better.
Ingredients:
Boneless/Skinless Chicken Breast
1 tbsp melted butter
1 tbsp Worcestershire (my husband said to decrease this amount)
1 onion, sliced
juice of 1 lemon (my husband suggested to increase to 2 lemons)
flour
garlic powder, salt, pepper, seasoning
Pepper jack cheese shredded
Slice onion and place slices in bottom of baking dish.
Salt and pepper and season chicken and coat with flour. Place on top of onions. Mix melted butter, lemon juice, Worcestershire sauce and garlic powder. Pour this sauce over the chicken.
Bake at 350 for 1 1/2 hours. (If using a glass baking dish, bake at 325). Baste with sauce every 20 minutes or until done. Add shredded cheese and bake until melted
Not the prettiest dish in the world, but cheese, onions, chicken, it goes together. I like the spice of the pepper jack, but the Worcestershire sauce is a bit on the sweet side and I didn't like that. I also used sweet onions and I think that might have added to the sweetness too. Plus, I think I had too much chicken for the "sauce"... ah well, live and learn! The chicken did come out tender though :)
