Tuna Salad


Tuna Salad - It's such an easy thing to make and often times I forget about it. But this time, the grocery store had a sale going, so I picked up two cans. My husband won't eat tuna, so I divide the salad and bring some over to my mom to share :)

Ingredients:

Tuna (can, in water)
2 Eggs
Mayo
Dill Relish
Celery

Directions: Boil the eggs (see below), chop up celery, mix all ingredients.
How much of each totally depends how what you like. I like a lot of crunchy celery, so I cut it in medium pieces (not really small) and I add plenty into the mixture. I like a little bit of bite with the relish, so I do a sample test and add more when needed. I'm not big into salt, but pepper is a nice touch too.

One of my good friends also includes onions and tomatoes - those taste really good as well with the tuna, but I didn't include them this time, because I know my Mom likes the ingredients above... I used to make the salad when I was a teenager and we would share it during the summer months. Good Memories.

Ok, to the hard boiled eggs. I'm a little behind in posting this, considering Easter is already done, but I thought it would be good to add it here.

Put the eggs in cold water and bring to a boil.
Once it's boiling, turn it down to a simmer for one minute.
Remove pot from the stove and Cover for 16 minutes
Run under cold water

I read those instructions on a different blog and the lady said she always came out with perfect hard boiled eggs. I tried it and - perfect!
