Barbecue Friendship

Well, I really didn't think it would happen, but I made nice with the barbecue pit! From start to finish, I barbecued chicken. Yes, folks, I even started up the pit. Greg found these candle lighters with a long neck and that's the way I am able to feel comfortable with the gas flame.

I also tried out a neat side dish ~ yes, a new recipe. I saw it on one of the cooking shows and thought, "Hmm, simple enough, I can do that!" If you're looking for another option with veggies, give this a try, it's tasty!


Roasted Broccoli and Tomatoes

Preheat oven to 450 degrees
Cut up 3 cloves, minced, cut up green onions
Cut up 2 florets of broccoli into bite sized pieces
Put all of the above in a bowl along with a pint of cherry tomatoes

Mix ingredients together with ½ teaspoon of red pepper flakes and 4 tablespoons of olive oil.
Spread the ingredients out on a roasting pan and cook in the oven at 450 for 18 minutes.

It came out great, though I’d probably do more green onions and more garlic next time. Also might try to add in some cauliflower (and mushrooms too - though I'll keep it in a separate place on the roasting pan, because Greg won't eat mushrooms!)

All in all, a tasty meal and 2 things off of the 101 List! Woo Hoo!

Hi Jen! Thank you! I'm really liking the goals and I hoping to get more accomplished before the end of May! *smiles* I've even done more than what was on the list and thought, "Gee, that should have been one of the 101 - consider it bonus." Lol. It's a good inspiration!

Hi Sukku,

Isn't barbeque such a relaxing way to cook? I always thought it was more of a man's thing, to barbeque, but I'm finding that I like it. Plus, it keeps the heat out of the house!

Lol. You might be waiting a for a long, long time. Lol. Greg is very patient with me and I don't think he actually thought I would cook the chicken, because I was also preparing the veggies at the same time. I like roasting the veggies, a different flavor (and I love garlic)! Thanks for posting!

Well it's fun to cook but cleaning the pit is the pits...what better way to cook with a beer to cool you down from the heat...

Hi Sukku, I don't mind cleaning.. Well, as for beer, I don't drink. Lol. That's OK, I still enjoy the experience. I do find that the only time I see my father holding a beer is when he barbecues. How funny. :)

Lol. Maybe so, but I'm sure there are plenty of women out there who drink. I'm just one of those oddities. I never acquired the taste for alcohol even in my college years.

Yum, that sounds delicious! I think it takes a bit to concour the grill, but once you've mastered it - it's the best thing since sliced bread in the summer. Grilled seafood, meats, veggies...I love it.

Hi Kel! Thanks for your comment. It's the flame that gets me. Never been comfortable around fire, but with the long candle lighter, I can light it up, no problem now.

Ahhhh, barbecued veggies - that's the next thing on my list!
Sounds yummy!

We love to eat grilled kebabs (minced mutton/chicken marinated in various spices and yogurt and shaped like rolls or patties) and grilled paneer (cottage-cheese)! Grilled brinjals (aubergines) also taste great!

I thought about grilling a kebab. My brother loves to do that with shrimp, eggplant, squash and mushrooms. Yumm. Greg is allergic to seafood, so that shrimp is out, but I could make it an all veggie kebab!
