As most of you know from Greg's guest blog post, I don't cook. I'm a measure me kind of cook in the kitchen while Greg is running circles around me, saying, "What are you using a measuring spoon for!" This coming from a man who used to be the General Manager (after working his way up) at various restaurants. Well, pardon me, honey...
So, I need your help ~ please! Greg and I are determined NOT to go out to eat. We want to eat healthy and cook things that can be made over the weekend, frozen and then reheated during the week. Because, let's face it, after work, I'm not in the mood to even look at a kitchen. The other dilemma is that Greg has diabetes (and I have high blood pressure).... so, if you have any recipes you can share, I'd REALLY appreciate it. If it's a long recipe, feel free to email me at:

Also ~ any crock pot cookers out there? ~ I love the idea of tossing stuff together in the crock-pot and coming home to it being cooked.

Hi Aleta! I have been out of the loop for several weeks - love the new do for the page :)
Here is one you can do and freeze and pull out to cook later:
Hobo Poached Tilapia
Do more, and make an assembly line out of it.
Take a sheet of foil and place on work surface (one for each tilapia filet - bass works too). Place one piece of tilapia on foil and layer on top, the following:
Several strips of red onion
¼ tsp garlic
pat of butter
a slice of lemon
1 sprig of thyme
sprinkles of salt/pepper & oregano
a splash of white wine
Fold foil to form a good seal.
Repeat with all pieces of tilapia.
Place all foil wrapped packets into a large Ziploc.
freeze or onto cooking directions
Thaw completely in refrigerator. Preheat grill to high heat. Place foil packets on upper
indirect grill rack and grill for approximately 30 minutes. Lift lid as little as possible
during that time, however, prevent flame flare ups. Alternatively, preheat oven to 400
and bake in foil 20 minutes in center of oven. Longer if using a thicker fish.
We like asparagus with this too!

Quick one here though - Place Salmon fillets on a foiled covered pan, and cover with a peach salsa.
Peach Salsa - Peaches, red onion, dash of balsalmic vinigar, garlic, yellow bell pepper - all cut up into bite size peices and smother the top of the salmon with the mixture. And cook for 25 minutes in a 350 oven.
(Fish is done when it flakes easy with a fork!)
I cant cook much. I cant even cook up the wishes.

* Frozen chicken breasts
* 1 can cream of chicken soup
* 1 package Lipton onion soup mix
(salt, pepper and any other seasonings you might want to sprinkle on the chicken)
Put your chicken breasts in the crock pot. Mix up the soup and onion mix (I usually put maybe half a can of water with it), pour it on top. Cook for about 8 hours on low or 3-4 hours on high. Serve with whatever veggies and/or rice. It is one of my daughter's favorite meals.
I have tons of recipes, but luckily don't have to deal with diabetes or HBP, so most of mine would blow one or the other - I'm sure.

The crock pot mac n cheese recipe is absolute perfection! I've been asked for the recipe a dozen times, from just two times I've made it to take to a function. How does Greg react to brown rice? (Some diabetics cannot tolerate rice and keep glycemic control - I can tolerate brown rice, but not some other foods.) I have some easy to fix and great to microwave recipes, but the good ones tend to involve brown rice.
